Chef Daniel Carter
Chef Dan has thirty+ years experience in a professional kitchen. He started as a dishwasher while in high school in Greenville, Mississippi, and later attended culinary school at Paul Prudhomme’s in New Orleans. He has opened the kitchens of various casinos and the Indianapolis downtown Marriott. While cooking for the Indianapolis Colts as the Executive Sous Chef at the Indianapolis Convention and RCA Dome, he also had the opportunity to oversee the meal preparation for President George W. Bush’s inauguration dinner in Washington, D.C. His experience of cooking for a party of two in their own home or 60,000 of President Bush’s closest friends, allows him to bring a creative home cooked menu to any wedding, luncheon or party. Still today, many of the made-from-scratch recipes came from Chef Dan’s grandmother, who was from Lafayette, Louisiana, that he then perfected in culinary school of large groups. Daniel started AlliCarte Catering, Inc in 2009, and added the food truck in 2011.
In our kitchen you will find our Sous Chef Cyrus Braud, a native of New Orleans, Louisiana. Cyrus’ mother also visits our kitchen sometimes and prepares authentic New Orleans pralines. Check the special board in the restaurant to see when they’re available.
